Benita’s DIY Grain Free Granola

Our resident Health Coach, Benita created this recipe when she couldn't find a low sugar grain free option.

Making your own granola takes a bit of time but is well worth the effort because you can customise the flavours to suit your taste buds. This also makes a big batch that lasts for weeks.

Ingredients:

1 cup almonds

½ cup brazil nuts

½ cup cashews or macadamias

1 cup pepitas

1 cup sunflower seeds

¼ cup linseeds

1 cup desiccated or shredded coconut

1 vanilla bean scraped

½ cup maple syrup 

2 tbsp coconut oil, warmed slightly if solid

1 tbsp cinnamon

Pinch Himalayan salt

For the chocolate lovers, add 2-3 tbsp raw cacao powder

Optional Extras- 1 cup dried fruit eg. goji berries, mulberries or dates.

 

INSTRUCTIONS:

Soak almonds for 12-14 hours(overnight) in water with 1 tsp salt. 

Soak cashews and brazil nuts for 6 hours in water with 1 tsp salt

Soak pepitas and sunflower seeds and linseeds for 6 hours in water with 2 tsp salt.

Drain nuts and seeds and rinse well. Place nuts in blender and pulse a few times to break down slightly. You can do the same with seeds or leave them whole. 

Add the nuts and seeds to a large bowl and add the cinnamon, coconut, salt. Mix to combine. In a small bowl combine the oil and maple syrup and pour over the nut mix and stir well. If using cacao add and stir well. 

Spread on dehydrator sheets and dehydrate for 12-14 hours at 37°C or place in your oven on the lowest setting until crunchy.

Enjoy with your favourite nut milk topped with coconut yoghurt and berries.
