Vegan Dark Chocolate Cranberry Pistachio Brownie Cookies

We love baking with the kids, and cookies are always an easy enough recipe for them to help with. With Christmas just around the corner (can you believe it?!) we thought these festive cookies would be a great recipe to feature this week, as we are probably all in need of some festive cheer! These would make a yummy gift too, who doesn’t love receiving homemade baked goods?!


2 Tbsp Ground Seedy Sister Organic Linseeds (grind in blender or coffee grinder to make flax meal)
¼ Cup Water + 2 Tbsp
1 Cup Seedy Sister Organic Cold Pressed Coconut Oil
1 ½ Cups Seedy Sister Organic Coconut Sugar
1 Tsp Vanilla Extract (have you tried to make your own with Seedy Sister vanilla beans yet?)
1 Cup Seedy Sister Organic Cacao Powder
1 Tsp Seedy Sister Baking Soda
½ Tsp Seedy Sister Fine Lake Salt
2 ½ Cups Seedy Sister Organic White or Wholemeal Bakers Flour (Can use Seedy Sister Gluten Free Flour if required)
½ Cup Seedy Sister Raw Pistachios
½ Cup Seedy Sister Organic Dried Cranberries
1 Cup Seedy Sister Couverture Chocolate Chips



Preheat the oven to 180c.

In a small bowl, whisk together the flax meal and water and set aside.

In a large bowl, add coconut oil and sugar and mix until well combined.

Mix in vanilla extract and flax meal mixture and stir until combined.

Using a sieve, add in (one at a time) cacao powder, baking soda, salt and then flour. Mix gently until well combined.

Finally, stir in pistachios, cranberries, and chocolate chips.

Line 2 large baking trays with baking paper.

Roll about 2 tbsp mix into balls and place on prepared trays.

Bake for 10-12 minutes until slightly golden.

Remove from the oven and allow to cool slightly, before transferring to a wire rack.
