No-Bake Oat Bars

No-Bake Peanut Butter & Chocolate Oat Bars

These no bake oat bars are a quick and easy snack to always have on hand! They only take about 10 minutes to prepare and are deliciously tasty!

Makes 16 bars!

Ingredients:

For the bars:

1 Cup Seedy Sister Organic Rolled Oats

1 Cup Seedy Sister Organic Desiccated Coconut

¼ Cup Seedy Sister Spray Free Activated Almond Meal

¾ Cup Seedy Sister Peanut Butter

½ Cup Seedy Sister Organic Maple Syrup

½ Tsp Seedy Sister Fine Lake Salt

½ Seedy Sister Vanilla Bean – Split and scraped

For the chocolate topping:

¼ Cup Seedy Sister Couverture Chocolate Chips

1 Tbsp Seedy Sister Peanut Butter

INSTRUCTIONS:

For the bars:

In a small bowl, mix oats, coconut, and almond meal. Set aside.

In a small pot, melt together the peanut butter and maple syrup.

Add vanilla and salt to taste.

Add the melted peanut butter to the dry ingredients.

Spread into an 8x8” dish and set aside.

For the topping:

Melt the peanut butter and chocolate chips together on the stove in a small pot.

Spread the melted chocolate over the top of the bars.

Set in the fridge until the chocolate is set.

Cut and serve cold or at room temperature.

Store in an airtight container in the fridge for up to 1 week – if they last that long.
