Gooey Rice Pudding

RECIPE OF THE WEEK: Gooey Rice Pudding

The most delicious gooey rice pudding is the perfect dish for these colder days and nights. Enjoy this recipe for breakfast, lunch, or dessert! You can adjust the flavours and add-ins as you would prefer.

Ingredients:

½ Cup Seedy Sister Organic Jasmine Rice – rinsed and well drained.

4 Cups of plant milk of your choice (Can also use Seedy Sister Coconut Milk Powder mixed with water to make 4 cups creamy coconut milk *Instructions below for our tip of the week*

2 Seedy Sister Organic Cinnamon Sticks

¼ Cup Seedy Sister Maple Syrup

½ Cup Seedy Sister Organic Sultanas

Pinch Seedy Sister Fine Lake Salt

Sprinkle of Seedy Sister True Organic Cinnamon – to garnish.

Optional:

*Seedy Sister Organic Cranberries ½ cup (instead of sultanas)

*Seedy Sister Vanilla Bean – Sliced down middle and cooked with rice

*Seedy Sister Organic Hazelnuts – toasted to garnish

INSTRUCTIONS:

In a medium saucepan, add rice and add just enough water to cover the rice. Heat the pan on medium heat, once rice has reached a boil, reduce heat to low and simmer for 10 minutes until water has reduced. Make sure it doesn’t dry out completely and burn. (If any water remains after 10 minutes – drain the excess water)

Add plant milk of choice, cinnamon sticks, and salt (add vanilla bean now if using) and bring up to a gentle simmer.

Simmer uncovered for 25 minutes and stir the pan every few minutes to ensure the rice doesn’t stick.

Add in the sultanas (or cranberries) and the maple syrup.

Cook for an additional 15 minutes, uncovered and stirring frequently until most of the liquid has been absorbed and has thickened up.

Remove the cinnamon sticks before serving and serve warm or cold.

Sprinkle ground cinnamon on top and toasted nuts.
