Healthy Christmas Cake

As Christmas is fast approaching, we thought a Christmas Cake recipe was very fitting. Many premade fruit and nut mixes for baking are full of preservatives, sulphurs, processed sugars, and artificial flavours. At The Seedy Sister all our dried fruits are preservative and sulphur free, and mostly all are organic. This recipe is healthy and packed full of good quality dried fruits and nuts. It is gluten free as it is made using almond meal.

Ingredients:

Zest and Juice of 1 Orange

1 Cup Seedy Sister Organic Sultanas

1 Cup Seedy Sister Organic Currants

1 Cup Seedy Sister Organic Cranberries

1 Cup Seedy Sister Spray Free Almonds, chopped

3 Cups Seedy Sister Activated Spray Free Almond Meal

2 Small Ripe Bananas

10 Seedy Sister Organic Medjool Dates, Pits removed.

2 Tsp Mixed Spice

1 Tsp Seedy Sister Organic Ground Cinnamon

½ Tsp Ground Cloves

½ Tsp Concentrated Vanilla Extract

Pinch Seedy Sister Fine Lake Salt

Christmas cake

INSTRUCTIONS:

Preheat your oven to 175c. Grease and line with baking paper - an 18cm round cake tin.

Place orange zest, juice, sultanas, currants, cranberries, and almonds into a medium sized saucepan. Heat until the juice starts to boil. Reduce heat to low, cover, and simmer for 5-10 minutes, stirring occasionally.

Place almond meal, bananas, pitted dates, spices, and vanilla into a food processor. Blend at high speed until the mixture resembles a smooth, thick batter. Stir through the fruit mixture. Spoon the cake mix into your prepared cake tin and use damp hands to smooth over the top of the cake.

Bake for 30 minutes. Cover with aluminium foil and bake for a further 15 minutes. Remove from the oven and allow to cool in the tin for 30 minutes.

Can be served once cooled, but the flavours do develop more by the next day, so its even better if prepared in advance.
