Vegan Lentil Loaf with a Maple Balsamic Glaze

Cannot think of what to make for your Christmas feast this year? We have got you! This is a perfect side dish for Christmas lunch or dinner this year. Creamy, herby, potato bake!

This recipe is adapted from Lazy Cat Kitchen!

Ingredients:

Loaf Mixture:

2 Tbsp Seedy Sister Organic Olive Oil

1 Onion – Diced

2 Stalks of Celery – Diced

1 Large Carrot – Diced

Half a Large Red Capsicum – Diced

2 Tbsp Seedy Sister Organic Linseeds/Flaxseeds made into meal + 6 Tbsp Water

1 Cup of Pre-Cooked Seedy Sister Organic French Lentils or Laird Lentils (soaked overnight and boiled)

250g Mushrooms

1 Cup Seedy Sister Organic Walnuts

½ Cup Seedy Sister Organic Sunflower Seeds

Handful of Fresh Mixed Herbs – Finely Diced (sage, parsley, thyme, and oregano are good – but use what you like)

¾ Cup Seedy Sister Organic Buckwheat Flour

2 Tbsp Tomato Paste

2 Tbsp Seedy Sister Organic Tamari Sauce

1 Tsp Seedy Sister Organic Garlic Powder

½ Tsp Seedy Sister Organic Smoked Paprika

1 Tsp Seedy Sister Fine Lake Salt

½ Tsp Seedy Sister Organic Black Pepper – Ground

Glaze:

2 Tbsp Tomato Paste

1 ½ Tbsp Seedy Sister Organic Tamari Sauce

1 Tsp Seedy Sister Organic Garlic Powder

½ Tbsp Seedy Sister Organic Maple Syrup

½ Tbsp Balsamic Vinegar

INSTRUCTIONS:

Preheat the oven to 180c and line a loaf pan with baking paper – set aside.

On medium heat add oil and onions to a saucepan. Sauté for a couple minutes before adding the celery and carrots. Cook for a further couple of minutes before adding capsicum. Let it cook for 8-10 minutes until the veggies have softened.

While that cooks, mix ground linseeds with water and set aside. This is the flax egg.

In a food processor, add half the cooked lentils (1/2 Cup), the mushrooms, walnuts, and sunflower seeds. Pulse until you get a finely diced consistency.

In a large bowl, add in the sauteed vegetables, mushroom mix, the rest of the cooked lentils, finely diced herbs, buckwheat flour, tomato paste, tamari sauce, garlic powder, smoked paprika, salt, pepper, and flax egg.

Mix thoroughly to combine well.

Press mixture into the prepared loaf pan and make sure the top is nice and flat.

In a small bowl combine all the glaze ingredients, and brush on the top of the loaf.

Bake in the oven for 1 hour

Remove from the oven and let sit for 30 minutes before removing from the pan and slicing.

Can be served immediately or served cold.
